Razor Clam Fritters

Ingredients
- 10 cleaned razor clams, finely chopped
- 1 cup flour
- 1 egg
- 1/2 cup milk
- 1 tsp baking powder
- 2 green onions, sliced
- Salt, pepper, oil for frying
Method
- Whisk flour, baking powder, egg and milk into a thick batter.
- Fold in chopped clams and green onions; season.
- Heat 1/4 inch oil over medium-high.
- Drop spoonfuls of batter, flatten slightly, fry 2 min per side until golden.
- Drain and serve with tartar sauce or a squeeze of lemon.
Tip. Keep the batter thick so the clams stay suspended and every fritter gets its share.
