Panko Razor Clam Strips

Ingredients

  • 12 cleaned razor clams, cut into strips
  • 1 1/2 cups panko
  • 1/2 cup flour, 2 eggs
  • 1 tsp garlic powder, 1 tsp paprika
  • Oil for shallow frying
  • Tartar or cocktail sauce

Method

  1. Cut clams lengthwise into finger-width strips; pat very dry.
  2. Season the flour with garlic powder and paprika.
  3. Flour, egg, then panko — press the panko on hard.
  4. Fry in 350°F oil about 1 minute per side until golden brown.
  5. Salt hot, serve with sauce and plenty of napkins.

Tip. Double-dip (egg → panko → egg → panko) any strips headed for kids — maximum crunch.
