Classic Fried Razor Clams

Ingredients
- 12 cleaned razor clams, patted dry
- 1 cup crushed saltine crackers (or panko)
- 2 eggs, beaten
- 1/2 cup flour
- Salt, pepper, a pinch of cayenne
- Oil or butter for the pan
- Lemon wedges
Method
- Set up three dishes: seasoned flour, beaten egg, crushed crackers.
- Dredge each clam in flour, then egg, then crackers — press to coat.
- Heat 1/4 inch of oil in a skillet over medium-high until shimmering.
- Fry clams 60–90 seconds per side, until deep golden. Don’t crowd the pan.
- Drain on paper towels, salt immediately, serve with lemon.
Tip. Overcooking is the only way to ruin razor clams — pull them the moment they’re golden. Seconds, not minutes.
