Quick Pickled Red Onions

Ingredients
- 1 red onion, sliced thin
- 3/4 cup vinegar (rice or cider)
- 3/4 cup hot water, 1 tbsp sugar, 2 tsp salt
- Peppercorns, optional chili
Method
- Dissolve sugar and salt in the hot water and vinegar.
- Pour over the onions in a jar.
- Ready in 15 minutes; better in an hour.
- Keeps 3 weeks refrigerated.
- Tacos, chowder, sandwiches, salads — everywhere.
Tip. Slice paper-thin on the short axis for the fastest pickle.
