Lemon-Garlic Butter (For Everything)
The house sauce of dig season

Ingredients
- 1 stick butter
- 4 garlic cloves, minced
- Zest + juice of 1 lemon
- Parsley, pinch of salt
Method
- Melt butter over low; garlic in for 2 gentle minutes.
- Off heat: lemon zest, juice, parsley, salt.
- Keep warm for dipping, or chill into a compound butter log.
- Melts over grilled clams, crab, potatoes, bread…
- Make a double batch. You will use it.
Tip. Low heat only — browned garlic turns the butter bitter.
