Beach Fries with Old Bay
The mandatory fried-clam sidekick

Ingredients
- 3 russet potatoes, cut into sticks
- Oil for frying (or a hot oven)
- Old Bay seasoning, salt
- Malt vinegar
Method
- Soak cut potatoes in cold water 20 minutes; dry WELL.
- Fry at 325°F for 4 minutes; rest.
- Fry again at 375°F until golden and rigid.
- Toss immediately with Old Bay and salt.
- Malt vinegar at the table.
Tip. The double-fry (or a 450°F oven, flipped once) is the crisp secret.
