Clam Popcorn Bites

Party-sized nuggets that vanish in minutes

Ingredients

  • 10 cleaned razor clams, cut into bite-size pieces
  • 1 cup flour, 1 cup club soda
  • 1/2 tsp baking soda, 1/2 tsp salt
  • Oil for deep frying
  • Ranch or remoulade for dipping

Method

  1. Whisk flour, baking soda, salt and club soda into a thin tempura-style batter.
  2. Heat oil to 370°F.
  3. Dip pieces and fry in small batches, 60–75 seconds, until barely golden.
  4. Rest on a rack 1 minute — they crisp as they cool slightly.
  5. Pile in a paper cone with dipping sauce.

Tip. Small pieces cook in seconds — err on pale gold; they darken off-heat.
