Buttermilk Slaw
Cool crunch against hot fried clams

Ingredients
- 1/2 head cabbage, shredded + 1 carrot
- 1/3 cup buttermilk + 1/4 cup mayo
- 1 tbsp cider vinegar, 1 tsp sugar
- Celery seed, salt, pepper
Method
- Whisk the dressing.
- Toss with cabbage and carrot.
- Rest 20 minutes; toss again.
- Taste for vinegar-sugar balance.
- Best within a day.
Tip. Salt the cabbage 10 minutes first and squeeze — the slaw stays crisp, not watery.
