Grilled Razor Clams, Garlic Butter

Ingredients
- 10 cleaned razor clams
- 4 tbsp butter, melted
- 3 cloves garlic, minced
- Handful parsley, chopped
- Lemon, salt, chili flakes
Method
- Mix melted butter, garlic, parsley, a squeeze of lemon and chili flakes.
- Get the grill screaming hot.
- Toss clams in half the butter, lay on the grate.
- Grill 1–2 minutes per side — just until they firm up and char at the edges.
- Off the heat, spoon over the rest of the garlic butter. Serve fast.
Tip. A grill basket keeps the clams from falling through the grate.
