Clam Skewers, Bacon-Wrapped

Ingredients
- 8 razor clams, halved crosswise
- 8 slices thin bacon, halved
- Maple syrup + black pepper glaze
- Soaked wooden skewers
Method
- Wrap each clam piece in a half-slice of bacon; thread onto skewers.
- Grill over medium, turning, until the bacon crisps, ~6 minutes.
- Brush with maple-pepper glaze the last minute.
- The bacon shields the clam — it stays tender inside.
- Serve hot off the stick.
Tip. Thin bacon is mandatory; thick-cut finishes long after the clam is done.
