Thai Basil Clams

Wok-hot, chili-garlic, basil perfume

Ingredients

  • 10 razor clams, sliced
  • 4 garlic cloves + 3 thai chilies, pounded
  • 2 tbsp oyster sauce, 1 tbsp fish sauce, 1 tsp sugar
  • 2 big handfuls thai basil
  • Jasmine rice

Method

  1. Screaming wok: garlic-chili paste 15 seconds.
  2. Clams and sauces; toss 90 seconds.
  3. Kill the heat; basil in, toss until it wilts and perfumes.
  4. Over rice immediately.
  5. Fried egg on top if you know what is good.

Tip. Thai basil (anise notes) beats sweet basil here, but use what you have.
