Lemon Clam Orzo

Ingredients
- 8 razor clams, chopped
- 1 1/2 cups orzo
- 3 cups stock
- Zest + juice of 1 lemon
- Butter, parmesan, dill or parsley
Method
- Toast orzo in butter 2 minutes.
- Stock in; simmer, stirring occasionally, ~10 minutes until creamy.
- Lemon zest and juice; season.
- Clams for the last 2 minutes.
- Parmesan and herbs; serve loose — it tightens fast.
Tip. Cook orzo like risotto, not pasta, and it makes its own sauce.
