Cold Sesame Noodles with Clams

Ingredients
- 8 razor clams, poached 90 seconds and chilled
- 10 oz wheat noodles, cooked and rinsed cold
- 3 tbsp sesame paste or peanut butter
- 2 tbsp soy, 1 tbsp black vinegar, 1 tsp sugar, chili oil
- Cucumber matchsticks, sesame seeds
Method
- Whisk sesame paste, soy, vinegar, sugar and a little noodle water into a pourable sauce.
- Toss the cold noodles in most of the sauce.
- Top with cucumber and the chilled clams.
- Drizzle the rest of the sauce and plenty of chili oil.
- Sesame seeds over everything.
Tip. Rinse the noodles ice-cold and oil them lightly so they never clump.
