Clam Aglio e Olio

Ingredients
- 6 razor clams, sliced
- 8 oz spaghetti
- 1/3 cup olive oil, 6 garlic cloves, sliced
- 1 tsp chili flakes
- Parsley, lemon
Method
- Cook spaghetti; reserve water.
- Slowly toast the garlic in oil until pale gold — low heat.
- Chili flakes in for 15 seconds; add pasta and a splash of water.
- Toss until emulsified; clams for the last minute.
- Parsley and a kiss of lemon.
Tip. Pale gold garlic is sweet; brown garlic is bitter. Watch it like a hawk.
